Every once in a while, you share a special meal with someone or a few someones. And it’s a magical event. You’re so close to each other, if for no other occasion than this meal.

You can look back on such a memory, which almost always stretched well into the evening or nighttime, and remember it as being somehow deeper than most others. Something special was shared. It’s hard to explain, perhaps harder to describe.  But hopefully, you recognize it.

But you can’t plan for it. You can’t make it happen at will. It just does.

Chicken Marsala

This dish is a guilty pleasure for me. I can’t say why exactly, it’s not as if it’s difficult to find in a restaurant. In fact, Chicken Marsala even shows up fairly often in non-Italian restaurants.

It could be because even though it might taste complicated and expensive, made well with good ingredients it’s actually a very simple affordable dish.

I know some of you will say, I’ve had it and it wasn’t great. Me too. But I’ve had it many times when it was great and I’m never going back.

So let’s do this.

Chicken Salad

Everyone has their guilty pleasures, their comfort foods, and their fallback dishes. One of mine is an everyday simple chicken salad.

Now, I think it’s fair to say at one time or another just about every ingredient possible has been stirred into someone’s bowl of chicken salad. Certainly there are some more popular and traditional than others.
