Simple Turkey Soup

If you roast a turkey then you can make turkey stock. And if you make turkey stock then you can make turkey soup.

Which is exactly what I do. Why?

Because it’s delicious, easy, affordable, and nourishing, my family has come to expect this whenever a turkey is roasted and I’m perfectly happy to oblige.

You’ll need a good, heavy soup pot, of course. If you don’t have one of those, well, ’tis the season.

My wife learned how to make this soup from her grandmother. It was considered the best part of leftovers. Understand, my wife doesn’t really like to cook. But this soup always gets made. It’s that good. And now it’s my job to make it.

If you didn’t cook your own turkey, ask whoever did for the bones and carcass anyway. Odds are they’ll just get thrown away and that would be a shame. Right?

My recipe assumes the herbs and spices from your turkey carry over into your stock. If not, add a few sprigs of thyme and a bay leaf to the stock.

(And by the way, you can make this just as easily with a roasted chicken too. Or even as your leftovers masterpiece after a supper with rotisserie chicken.)

You can substitute pasta for the rice if you prefer. If so, add it just before everything’s done — you don’t want to overcook it. And if you’d rather use plain white rice, that’s fine too. Make the soup your own!

And, if you’d like, you can mix in a bit of milk, half-and-half, or even cream at the end or when you re-heat.

Ingredients

  • 4 quarts turkey stock
  • 1 cup onion, diced
  • 1 cup carrot, diced
  • 1 cup celery, diced
  • 1 cup wild rice
  • 2 cups turkey pieces, bite-sized, shredded or diced
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper

Instructions

  1. Bring stock to boil in a heavy pot.
  2. Reduce heat to simmer.
  3. Add onion, carrot, celery, wild rice, salt, and pepper.
  4. Let simmer for 1 hour.
  5. Add turkey pieces.
  6. Let simmer for 30 minutes.
  7. Adjust seasoning to taste.

  1. Well Bill, I must say I’d fall in to the non-turkey liking category. Perhaps too many lingering days of turkey leftovers as a child. Another good reason is that here turkey cost about three times what it does in the US. But chicken is about the same price.
    With that said, your soup recipe looks very good. I have a couple of guinea fowl carcasses and some homemade stock in the freezer that are looking for a good soup recipe. Thanks for the post.

    • Ron, I will caveat with a) I like a *good* turkey, e.g. not one injected with a bunch of water and salt to compensate, and b) I like a turkey that’s been well-roasted. I’ve used the same recipe for 25 years or better and every single time had someone ask for the recipe. (Perhaps I should write it up here?) But I’ve had more than my share of bad turkey too, so I feel your pain. As for availability, the fact that you can get it at all over there is pretty impressive!
